Details

Ok, so contrary to the name, this sugar doesn't actually come from coconuts. It actually comes from tapping the sweet nectar of the tropical coconut palm tree flower. The juice is dried in a large open kettle drum and condensed into delicious, sugary magic. It's great for baking, but you can also use it to prepare sauces, add flavor to your Asian dishes, or even sweetening up your morning coffee.

Coconut sugar

Coconut sugar is delicious. I also read it doesn’t raise blood sugar levels as high as cane sugar does. Has a great taste.

Delicious

I use this coconut sugar in my hot chocolate and on my unsweetened yogurt. It is lower in glycemic value than processed white sugar and I'm happy about that! The texture is a little lumpy but it melts evenly. I don't know if it would be hard to get an accurate measure for baking, but I don't bake much so this isn't a problem. I love the flavor.....a little brown sugar maple flavor.
