Details

Saffron is a star in cuisines originating from the Mediterranean to South Asia—a true world star. Cultivated and sun-dried in the deserts of Herat, Afghanistan, these whole saffron threads carry as much history and value as they do flavor. During the annual harvest in November and December, farmers begin work at dawn, plucking the beautiful white and purple crocus flowers before the desert sun can wilt the stigmas. Each flower produces only three delicate stigmas, which are painstakingly extracted by hand and dried.

Ingredients

100% whole saffron threads (Crocus sativa)

How to Use

Steep a few threads in warm water when making crunchy baked rice, or add to homemade ice cream. Pairs well with Cloud Forest Cardamom, Wild Mountain Cumin, and Silk Chili Flakes.

How it does good

Burlap & Barrel sources their spices directly from farmer cooperatives and small farms. They visit each of these farms, spending time with the employees to learn about the economic, social, and environmental implications of their methods. Every decision they make is fueled by their goal to end inequality and exploitation in the food industry. They do this by connecting small farms to high-value markets, educating consumers about the impact of product traceability, and sourcing unique foods that are grown using biodynamic and organic techniques.
