Olympia Provisions' products do not include any antibiotics and hormones, and their pigs are raised according to the animal welfare standards of American Humane and the Global Animal Partnership.

The outer carton is curbside recyclable, and the inner packaging is recyclable through TerraCycle.

The pigs they source for their high quality cured meats are raised on farms that are regularly audited by third parties, and meet the animal welfare standards of American Humane and the Global Animal Partnership. As Oregon’s first USDA-approved salumeria, everything that Olympia Provisions makes is handcrafted with high quality.

Salumist Elias Cairo grew up watching firsthand the old-fashioned way of making charcuterie from his father. Elias later left for Europe to apprentice in the kitchens of masters and there he rediscovered the art of curing meat and found inspiration. The experience affirmed what he’d been taught all along: handmade is better. Staying true to that belief, Olympia Provisions seeks out the best and freshest ingredients, and only butcher antibiotic-free pork for their cured meats.
