Salumist Elias Cairo grew up watching firsthand the old-fashioned way of making charcuterie from his father. Elias later left for Europe to apprentice in the kitchens of masters and there he rediscovered the art of curing meat and found inspiration. The experience affirmed what he’d been taught all along: handmade is better. Staying true to that belief, Olympia Provisions seeks out the best and freshest ingredients, and only butcher antibiotic-free pork for their cured meats.
