Tom Kha Phak is Thai comfort food. Fresh veggies and tofu simmer in a slighty sweet, creamy coconut broth. Amy's Kitchen might be California-based, but they could have fooled us with their take on the Thai favorite. They use organic tofu, vegetables, and spices to make it more nutritious than your average canned soup. Just heat it up, spoon it out, and savor a rich, flavorful dish that's better than takeout and can definitely hold a candle to most people's homemade (unless of course, it's made by grandma).
