Why we love it

For over 7,000 years, bamboo has been an intricate part of Asian culture, used in everything from China’s first books to elegant (and deadly) weapons to, yes, food. As rich in flavor as they are in history, these certified organic shoots are harvested young for a pale yellow color and satisfying crunch.
