The pigs they source for their high quality cured meats are raised on farms that are regularly audited by third parties, and meet the animal welfare standards of American Humane and the Global Animal Partnership. And not one to waste the amount of effort and resources that goes into their products, Olympia Provisions is committed to using every part of the animal.

The pigs raised by their network of local farmers in the Northwest have access to the outdoors and live in a cage-free environment; the majority of them are fully pasture-raised.

    Olympia Provisions uses every part of the animal, so that none of the resources that go into growing that animal are wasted. By 2023, they hope to source 75% of their pigs from their local Northwest network of farmers.

    Olympia Provisions founded and established a Pacific NW small farmer network that helps farmers become GAP4-certified, purchase whole hogs, receive a living wage, and utilize the entire animal. They’re also Oregon's largest second chance employer.

Salumist Elias Cairo grew up watching firsthand the old-fashioned way of making charcuterie from his father. Elias later left for Europe to apprentice in the kitchens of masters and there he rediscovered the art of curing meat and found inspiration. The experience affirmed what he’d been taught all along: handmade is better. Staying true to that belief, Olympia Provisions seeks out the best and freshest ingredients, and only butcher antibiotic-free pork for their cured meats.
