“Vanilla” is often synonymous with simple, neutral, or boring. But the vanilla bean is one of the hardest crops to grow. It only flowers once a year and has to be picked, by hand, right away. Eighty percent of vanilla comes from Madagascar, where its been painstakingly harvested for generations. But, at the same time, almost 80% of the people in the country, vanilla farmers included, are living in poverty. The Vanilla Bean Project set out to change this, with a commitment to buying from small-batch, women-owned makers, breaking the tradition of a few vanilla companies monopolizing the market and selling their extract for high prices the growers don’t see. The result is a high-quality extract that ensures financial security for the farmers, suppliers, and communities it comes from.

How to use it

All you need for flawless, old-fashioned ice cream are egg yolks, sugar, milk, heavy cream, and 2 teaspoons of this rich vanilla extract.
